Sale Cooking – Cheese and Spinach Stuffed Chicken with Rice

Here is a sale cooking meal idea for this week using items on sale at Market Basket and Shaw’s. If you don’t have both stores near you, you can still get most of the items on sale at one store or the other. There are also a couple of potential coupons to use with these which might make the sales even better.

Mozzarella, Feta, and Spinach Stuffed Chicken with Rice

What you’ll need and what’s on sale:

Chicken – On sale at Shaw’s boneless skinless breast for BOGO (buy one get one free) or Market Basket Perdue Perfect Portions Chicken on sale for $5.99/pk plus use a $1/1 coupon for Perdue perfect portions from coupons.com (affiliate link) making it $4.99 for a 24 oz package of Perdue chicken. You can also use chicken you already have from the last stock up sale.

Uncle Bens Ready Rice – This is a quick rice for an easy weeknight meal. On sale at Shaw’s for 2/$4 this week. You may also still be able to find a $1/4 coupon on coupons.com (affiliate link).

Sargento Cheese Shreds on sale at Market Basket for 2/$5. You can also get Sargento cheese slices and use a $.55/1 coupon from coupons.com (affiliate link), whichever is a better deal at your store.

President Crumbled Feta on sale for $3.49 at Market Basket.

Baby Spinach (Fresh Express Baby Blends) on sale for $2/4.

From your pantry

Eggs (if you need eggs you can get them on sale at Shaw’s: Shaw’s brand on sale for $1.69, Eggland’s best for $2.99, or use a coupon for $.35/1 land o lakes eggs which will double at Shaw’s.)

Breadcrumbs

Olive Oil

Garlic

Salt

Recipe: (amount of ingredients is based on how much you can stuff into your pieces of chicken, so it will be pretty non specific)

Preheat oven to 350 degrees. Pound out 4 pieces of chicken to make it easier to stuff and roll. Saute bag of spinach in a pan with oil, salt and 1 or 2 cloves crushed garlic. Whisk two eggs and place in a pie late. Pour 1 cup of breadcrumbs into a pie plate. Stuff each piece of pounded chicken with shredded mozzarella (~1 tbsp each piece ), crumbled feta (~1 tbsp each piece), and sauteed spinach (~2 – 3 tbsp each). Roll the chicken around the stuffed mixture, coat with the whisked egg, then coat in the breadcrumbs. Use Pam cooking spray or a little oil on a pan and place stuffed chicken on the baking sheet adding a drop of olive oil to the top of each one. Bake in 350 degree oven for 20 – 25 minutes. Cook Uncle Ben’s Ready rice in 90 seconds in the microwave.
